White Chocolate Raspberry Cheesecake
Preheat oven to 350 F
1 cup chocolate cookie crumbs 3 Tbsp melted margarine
1. In a medium bowl, mix cookie crumbs, and melted margarine until well blended
2. Press mixture onto the bottom of a 9 inch spring form pan
3. Bake at 350 F for 10 min
4. Remove from oven
5. Increase temperature to 425 F
Raspberry Sauce:
1 (10 ounce) package frozen raspberries 2 Tbsp white sugar
2 tsp cornstarch ½ cup water
2 cups white chocolate chips ½ cup half-and-half cream (or milk)
3 (8 ounce) pkgs cream cheese (softened) ¾ cup white sugar
3 eggs 1 tsp vanilla extract
6. In a medium sauce pan, combine raspberries, sugar, cornstarch and water
7. Bring to boil
8. Continue boiling until sauce is thick and clear
9. Strain sauce through a mesh strainer to remove seeds. Set aside
10. In the top of a double boiler, heat white chocolate chips and half-and-half, stirring occasionally, until chocolate is melted and smooth
11. Remove from heat and allow to cool till lukewarm
12. In a large bowl, beat cream cheese and sugar until smooth
13. Beat in eggs, one at a time
14. Blend in vanilla and melted white chocolate chips
15. Pour half of batter over crust
16. Spoon 3 Tbsp of raspberry sauce over batter
17. Pour remaining batter into pan
18. Spoon another 3 Tbsp of raspberry sauce over the top of the batter
19. Swirl batter with the tip of a knife to create a marbled effect
20. Bake in the preheated oven for 10 min
21. Reduce heat to 250 F for 35 - 40 min, or until filling is set
22. Cover with plastic, and refrigerate for a few hours before removing from pan. Serve with remaining raspberry sauce

Sadly, I don't think these will transport well... the mail tends to be a kinda squishy place. Ewwwwww!!! (lick lick lick lick lick lick)
Ha ha, it gets squished up anyway once it hits our mouth!!!
Sounds yummy, I know Tony would eat the lots in about two sittings if I made it. (I'm not a sweet tooth so it would last about 2 weeks with me).
Mind you Tiramsu is another thing!!! I would eat that in two days (must be the alcohol in it).
