Kale Chips

Ever since I first heard about Kale Chips I've been wanting to make some. Over the past month I finally got around to making a couple of batches, while refining a workable recipe that is fairly simple, quick, and easy.

They're a nice (and hopefully healthy) alternative to oily, potato chips.


Kale Chip Recipe —

• 1 large bunch of fresh kale
• 2 tablespoons olive oil
• 1 tablespoon balsamic vinegar
• 1 tablespoon apple cider vinegar
• 1/2 teaspoon salt
• few twists of freshly ground pepper
• (heavy) dash garlic powder


1. Preheat oven to 325 degrees.

2. Trim thick stems out of kale. Chop remaining strips into bite-size pieces.

3. In a mixing bowl, stir together oil, vinegar and seasonings. Toss kale in mixture, ensuring the kale is well coated.

4. Spread out kale in a single layer on a baking sheet(s) and bake for about 15 minutes or until edges begin to brown.

5. Let cool and store in an airtight container (if you don't eat them all first).

It's also wonderful to add taco seasoning OR lemon and garlic to them.  Pretty much any kind of chip you can think about eating, you can make with this versatile recipe.  I'm thinking cool ranch on my next round.
